Beef Patties Chasseur

1 1/4 lbs. extra lean ground beef |
1. Divide ground beef into 4 patties about 1-inch thick. Heat
butter in heavy skillet. Add patties. Sauté 3 minutes on each
side until medium rare. Remove onto warm platter. 2. Add mushrooms and shallot to pan. Sauté for 3 minutes. Turn heat to high. 3. Add wine and beef consommé. Cook until sauce is reduced and slightly thickened. Add parsley, chervil and tarragon leaves. 4. To serve, pour sauce over beef patties. |
