Beef Patties Chasseur

 

Ingredients

Preparation

1 1/4 lbs. extra lean ground beef
2 tbsp butter or margarine
1/2 lb. mushrooms, chopped
1 shallot or green onion, minced
3/4 cup dry white wine
1/4 cup canned beef consomme
1 tsp. minced parsley
1/2 tsp. each dried chervil and tarragon leaves

1.  Divide ground beef into 4 patties about 1-inch thick.  Heat butter in heavy skillet.  Add patties.  Sauté 3 minutes on each side until medium rare.  Remove onto warm platter.

2.  Add mushrooms and shallot to pan.  Sauté for 3 minutes.  Turn heat to high.

3.  Add wine and beef consommé.  Cook until sauce is reduced and slightly thickened.  Add parsley, chervil and tarragon leaves.

4.  To serve, pour sauce over beef patties.
